White Christmas fruit cake recipe. In our humble opinion, any decent Christmas spread needs a good fruit cake. If you’re ready to give your usual recipe a break this year, take a look at our newest creation. We have turned the classic white Christmas treat into a new version of a fruit cake, loaded with chunks of chocolate, glacé cherries, almonds and coconut. Store this fruit cake well wrapped in plastic wrap and foil in a cool dark place once completely cool.

11 Ingredients

– 250g butter, at room temperature

– 215g (1 cup) caster sugar

– 4 eggs

– 500g mixed dried fruit

– 200g red glacé cherries, halved

– 150g (1 cup) plain flour, sifted

– 150g (1 cup) self-raising flour, sifted

– 120g (3/4 cup) blanched almonds, toasted, chopped

– 100g white chocolate, chopped

– 45g (1/2 cup) desiccated coconut

– 125ml (1/2 cup) coconut rum

3 Method / Steps

Step 1

Preheat oven to 160C/140C fan forced. Grease a 7cm-deep, 22cm (base size) round cake pan. Line the base and side with three layers of baking paper, allowing the paper to overhang 5cm above the side.

Step 2

Use electric beaters to beat butter and sugar in a large bowl until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Add the dried fruit, cherries, flour, almonds, chocolate, coconut and rum. Stir until combined.

Step 3

Transfer mixture to prepared pan. Smooth the surface. Bake for 1 hour 45 minutes-2 hours or until a small knife inserted into the centre comes out clean. Cover the cake with foil then set aside in a pan to cool completely. Serve.
