– 500g lean beef mince

– 2 tablespoons olive oil

– 1 onion, diced

– 2 cloves garlic, minced

– 1 red capsicum, diced

– 1 teaspoon dried oregano

– 1 teaspoon chilli powder

– 1 teaspoon sugar

– 1 can diced tomatoes

– 1 can red kidney beans, drained and rinsed

– 1 cup beef stock

– Salt and pepper, to taste


1. Heat the olive oil in a large saucepan over medium-high heat. Add the beef mince and cook until browned, breaking it up with a wooden spoon as it cooks.

2. Add the onion, garlic, capsicum, cumin, coriander, paprika, oregano, chilli powder and sugar. Cook for a few minutes until the vegetables are softened.

3. Add the diced tomatoes, red kidney beans and beef stock. Bring to a simmer and cook for 15 minutes, stirring occasionally.

4. Taste and season with salt and pepper, if needed.
