Smoky spinach shakshuka

Easy, spicy shakshuka recipe is a great way to get your protein and vegetables for breakfast. Delicious served with yoghurt and toast.

 

Ingredients

  • 3 tbsp olive oil
  • 2 garlic cloves, crushed
  • 2 spring onions, thinly sliced
  • ½ tsp salt
  • 1 tbsp tomato purée
  • 4 tomatoes, roughly chopped
  • 2 tsp cumin seeds
  • 1 tsp smoked paprika
  • 200g/7oz baby spinach leaves
  • 4 free-range eggs
  • 1 tsp red chilli flakes

To serve

  • 4 tbsp Greek-style yoghurt
  • 4 slices toasted sourdough
