Potato, leek and bacon bake recipe

* 800g Sebago potatoes
* 1 tbsp olive oil
* 1 leek, trimmed, halved, washed, thinly sliced
* 2 garlic cloves, thinly sliced
* 400g piece double smoked ham, diced (see note)
* 535g can country chicken soup
* 100g tasty cheese, grated
4 Method / Steps
Step 1
Preheat oven to 180°C/160°C fan-forced. Lightly grease a 6-cup-capacity baking dish.
Step 2
Bring a saucepan of water to a boil over high heat. Cook potatoes for 12 to 15 minutes or until just tender. Drain. Transfer to a bowl. Stand for 10 minutes. Slice potatoes.
Step 3
Meanwhile, heat oil in a large frying pan over medium-high heat. Add leek. Cook, stirring, for 5 minutes or until softened. Add garlic and ham. Cook for 2 minutes. Stir in soup. Transfer to a large bowl. Add potatoes. Season with pepper. Stir gently to coat in the mixture.
Step 4
Spoon into prepared dish. Sprinkle with the cheese. Bake for 30 minutes or until cheese is golden. Stand for 5 minutes. Serve.
