Isle of Wight stuffed tomatoes

Beef tomatoes stuffed with mince and served with a rich tomato sauce. A great way to use up a glut of tomatoes.

 

Ingredients

  • 5 beef tomatoes
  • 1 shallot, finely chopped
  • 500g/1lb 2oz lamb mince
  • 25g/1oz fresh breadcrumbs
  • 300g/10½oz button mushrooms, finely chopped
  • 3 tbsp chopped fresh tarragon
  • salt and black pepper
  • 25ml/1fl oz olive oil

For the sauce

  • 8 medium tomatoes (preferably Island Beauty tomatoes), cut into quarters
  • 50ml/2fl oz rapeseed oil
  • 2-3 garlic cloves, finely chopped
