Green salad with buttermilk dressing

Crisp iceberg lettuce and peppery watercress make a fresh springtime salad

 

Ingredients

  • 1 garlic clove, crushed
  • 100ml buttermilk
  • 2 tbsp mayonnaise
  • 100g bag watercress
  • 1 iceberg lettuce, trimmed and cut into wedges

 

Method

  • STEP 1

    First make the dressing. Mix together the garlic, buttermilk and mayonnaise. When ready to serve, arrange the watercress and iceberg on a plate. Drizzle over most of the dressing, serving any leftovers separately for guests to help themselves

     

 

Shredded greens salad

 

A crunchy salad of apples, fennel, cucumber, celery and spring onions – a healthy and light side dish for a crowd

 

Ingredients

  • 4 limes
  • 2 green apples, cut into matchsticks
  • 2 fennel bulbs, cut into matchsticks
  • 1 cucumber, deseeded and cut into matchsticks
  • 3 celery sticks, cut into matchsticks
  • 6 spring onions, cut into matchsticks
  • 2 tbsp olive oil

Method

  • STEP 1

    Zest and juice 2 of the limes into a big salad bowl. Top and tail the remaining 2 limes to sit flat on a chopping board. Use a small serrated fruit knife to cut away the peel and pith in downward strokes. Cut the segments from the pith and roughly chop. Add to the salad bowl with the apples, fennel, cucumber, celery, spring onions and olive oil. Cover and chill until ready to serve.
