Cod en papillote with spicy olive sauce

solo fish supper sees steamed cod served on top of a quick chilli tomato sauce, with plenty of olives and crusty bread for company.

 

Ingredients

  • 1 tbsp olive oil, plus extra for drizzling
  • 1 red pepper, finely chopped
  • ½ red chilli, sliced and seeds removed
  • 1 tbsp capers
  • pinch herbs de Provence
  • 400g tin chopped tomatoes
  • 1 cod fillet
  • 1 lemon
  • handful green and black olives, chopped
  • sea salt and freshly ground pepper
  • crusty bread, to serve
