Cauliflower latkes

These cauliflower latkes are light, crispy and golden. Serve immediately with soured cream spiked with a little fresh lemon juice, or perhaps some hot sauce.

 

Ingredients

  • neutral cooking oil (such as sunflower or rapeseed), for frying
  • 1 large brown onion, finely chopped
  • 2 large garlic cloves, crushed or grated
  • 300g/10½oz cauliflower florets
  • 2 large free-range eggs
  • 3 tbsp plain flour
  • ½ tsp baking powder
  • 2 tsp chopped dill
  • sea salt and freshly ground black pepper
